Hi, I'm remodelling a restaurant in Moab and have run into interpretation issues with Type I grease hood on an exterior 2x6 wood-framed wall. My hood is 0-clearance to wall but inspectors feel I need to construct a 3 5/8 metal stud wall 1 inch off existing 5/8 fire-taped drywall then another layer of 5/8 before applying my stainless. 10-burner stove is under hood and that 5+ inches takes too much room in the cooking line. Any suggestions (very soon)? Thanks. Jack (Jackbuilt)
